2 cups flour, scant
¾ tsp salt
½ plus ⅛ cup butter milk
1 Tbsp superfine sugar
3 Tbsp butter, softened
½ Tbsp baking powder
½ onion, peeled and finely chopped
½ cup cheddar cheese, grated

2 Loaves:
4 cups flour, scant
1 ½ tsp salt
1 ¼ cup butter milk
2 Tbsp superfine sugar
6 Tbsp butter, softened
1 Tbsp baking powder
1 onion, peeled and finely chopped
¾ cup cheddar cheese, grated

Directions:
Directions:
Preheat the oven to 425º F. Line a baking sheet. Mix all ingredients except the onion and cheese together using a mixer or stirring by hand. Add the onion and cheese and incorporate, either by hand or in the mixer (don't overmix), into the dough.
If making 2 loaves, divide the dough into two pieces and tip out onto a lightly floured counter. Shape into a ball, then flatten each with your hand so they are approximately 2 inches thick. Cut a deep cross into each, then dust with a little flour and put on the baking sheet.
Bake for 30 minutes, then serve warm. Good for Breakfast with sausage gravy.
