1½ lbs. lean Ground Beef
1 cup soft Bread Crumbs
1 Tbsp. Onion, minced
¼ tsp. Salt
⅛ tsp. Cloves
⅛ tsp. ground Ginger
1 (20 oz.) can Crushed Pineapple, drained, reserve liquid
⅓ cup Lemon Juice
⅓ cup firmly packed Light Brown Sugar
2 Tbsp. Soy Sauce
½ cup Beef Bouillon
2 Tbsp. Cornstarch
1 green pepper, seeded and chopped
In a large bowl, combine beef, bread crumbs, onion, spices, egg and ¼ cup drained, crushed pineapple. Mix well.
Shape into 1-inch meatballs.
Brown meatballs, drain fat. Add enough water to pineapple liquid to create 1 cup. Combine pineapple and liquid with all the remaining ingredients in saucepan; stir just until sugar is melted.
Add to cooked meatballs.
Bake at 350º for 25 to 30 minutes.
