1 lb dried black beans
8 cups water
1 cup onion, chopped
1 cup celery, chopped
1 cup green pepper, chopped
1 garlic clove, minced
1T olive oil
1 tsp salt
˝ tsp pepper
3 - 8oz cans tomato paste

Directions:
Directions:
Sort and wash beans, place them in a large Dutch oven with the water. Over med-high heat bring beans to a boil, cook for 3 minutes. Remove from heat; cover and let stand for 1 hour. Do not drain.

Sauté onion, celery, green pepper and garlic in olive oil till tender.

Add the sauté vegies, salt and pepper to the beans. Over med-high heat bring mixture to a boil. Cover and reduce heat; simmer for 1˝ hours or till beans are tender.

Stir in tomato sauce; simmer for another 30 minutes.

I served this over a bowl of white rice with a side of cornbread!
