Tortilla Soup Recipe

1 chopped onion
2 cloves minced garlic
1 jalapeņo (opt)

1 can stewed chopped tomatoes (undrained)
1 can Rotel tomatoes (undrained)
1 can beef broth
1 can chicken broth
1 can tomato soup
1 1/2 cups water
1 tsp cumin
1 tsp salt
1 tsp chili powder
1 tbsp cilantro (I add lots more)
2 chopped baked chicken breasts ( I use rotisserie chicken)

6 white corn tortillas cut into strips
1/2 cup grated cheddar cheese

Shredded cheese
Sour cream

Saute first three ingredients in oil.

Add the next 11 ingredients and cook for 1 hour. After 1 hour, add tortilla strips and cheddar cheese.

Serve hot with remaining 4 items as garnish.
