1 cup margarine
2 cups sugar
3 eggs
3 cups all purpose flour
1 1/2 tsp baking soda
1/2 tsp. salt
1 tsp.cinnamon
1/4 tsp. Nutmeg
1 tsp. Vanilla extract
3 cups chopped apples ( I use red delicious)
2 cups chopped walnuts

Directions:

Preheat oven to 325 degree.

Cream margarine and sugar until fluffy. Add eggs one at a time, beating well after each addition.

Sift and mix flour, baking soda cinnamon and nutmeg. Gradually add flour mixture to egg and sugar mixture. Mix well. Stir in vanilla, apples and walnuts. Batter will be stiff.

Spoon into a greased and floured tube or bundt pan. Bake for 1 1/2 hours.

Let cool in pan for 10 minutes before moving to a rack to cool.

A good friend and neighbor always baked this for Super Bowl Sunday. I told her I didn’t want the recipe unless she moved. That’s how she told me later when hubby got transferred to Atlanta. Broke my heart.
