9 Eggs, Hard Boiled *
3 Slices, Bacon, Fried crisp and finely chopped or crumbled
1/2 c Mayonaise
2 Tbsp Green Onions, finely chopped
1 tsp (heaping) Prepared Mustard
Salt and Pepper to taste

Perfect Hard Boiled Eggs;
Cover eggs with cold water in an uncovered pan large enough not to crowd them.
Turn on medium high. When water starts to boil, adjust heat to a gentle simmer for 14 minutes. Turn off heat and allow pan to reset on burner for 11 minutes. Remove pot from stove and pour out the hot water. Refill pan with very cold water, let rest for a few minutes and then crack and peel the eggs.

Cut each egg half lengthwise; gently scoop out yolks and place them in a bowl. Mash yolks with a fork or a pastry blender then stir in mayonaise; green onions, mustard, and bacon. Add salt/pepper to taste.
Spoon or pipe approx 1 tablespoon of yolk mixture into each egg-white half. Garnish with finely chopped green onion tops or sprinkle lightly with paprika. Serve immediately or chill up to 4 hours.
