1 beef roast
2 cloves garlic
salt
pepper

Directions:
Directions:
1. Heat oven to 325 degrees
2. Season meat with salt and pepper.
3. Insert garlic
4. Place fat side up on rack in roasting pan.
5. Insert meat thermometer through outside fat into thickest part of meat.
6. Roast 20 - 26 minutes per pound for rare; meat thermometer should register 140 degrees.
Roast 27-30 minutes per pound for medium; meat thermometer should register 160 degrees.
Roast 31-35 minutes per pound for well done; meat thermometer should register 170 degrees.
7. Add 10 extra minutes per pound for rolled roasts.
8. For very rare meat, roast at 200 degrees for 1 hr per pound
