Veal Scallops with Mushrooms Recipe

2 lbs. veal scallops
1 tsp. salt
tsp. ground pepper
cup flour
6 tbsp. butter
2 tbsp. olive oil
1 lbs. mushrooms
cup beef consomme
cup white wine
1 tomato diced
1 tsp. tarragon
tsp. savory
tsp. dry mustard
fresh chopped parsley

1. Pound veal to inch thick.
2. Mix salt, pepper, and flour and coat meat.
3. Brown veal in butter and oil.
4. Add onions, consomme and wine to pan; bring to a boil.
5. Add tomato, remaining spices, veal and mushrooms.
6. Simmer, covered over low heat for 30 minutes, turning veal occasionally.
7. To serve, arrange veal, mushrooms and sauce on warm platter with chopped parsley.
