3 Tbsp White Wine Vinegar
2 Tbsp Olive OiI
1 tsp sugar
3 Cucumbers, peeled and thinly sliced (about 2 lbs)
1 (10 oz) container of grape tomatoes, sliced in half
1/2 med. Vidalia Onion, very thinly sliced into half moons
2 Tbsp Dill, chopped
Kosher Salt (to taste)
Black Pepper, freshly ground (to taste)

Directions:
Directions:
In a large bowl, whisk together vinegar, olive oil, and sugar.
Toss in cucumbers, tomatoes, onion, and dill. Season with salt and pepper.
Let marinate at room temperature for 20 minutes before serving.

Sometimes I like to add a little shredded mozarella cheese or sliced pepperonis.
