Personal Notes:
Personal Notes:
Grandma adopted some really great Mexican dishes when she moved from Iowa to California. This is one of our family favorites. You can make it a day ahead and refrigerate. A little salsa or hot sauce on the top adds extra spice. Freezes well after baking and is a good dish for those times you want to drop off a meal to someone. We serve it with fresh avacados sprinkled with lime juice or chips and salsa.
