3 Tbsp. red wine vinegar
1 can pineapple tidbits, drained, juice reserved
3 Tbsp. brown sugar
1/2 tsp. ground ginger
1/2 tsp. paprika
2 Tbsp. soy sauce
Salt and pepper to taste
1 heaping Tbsp. cornstarch
Hot water
2 or 3 boneless skinless chicken breasts, cut into chunks
Hot cooked rice

Directions:

In a small bowl, combine vinegar, brown sugar, ginger, paprika, soy sauce and reserved pineapple juice. Whisk until well mixed. Set aside.
In another small bowl, combine cornstarch with a little hot water. Set aside.
In a wok or large skillet, cook chicken over medium high heat until done. Add pineapple tidbits. Add vinegar mixture and stir to combine.
Whisk in cornstarch mixture. May need to use more cornstarch depending on how thick you want sauce to be.
Cook until thickened. Serve with hot cooked rice.
