4 chicken breast pieces (approx. 1 1/2 lbs)

Group #1:
3/4 cup dried bread crumbs
2/3 cup parmesan cheese
3/4 teaspoons dried parsley flakes
1/4 teaspoon black pepper

Group #2:
1 cup melted butter or margarine
a dash garlic powder

2 tablespoons lemon juice (fresh or concentrate)

Directions:
Stir 1st group of ingredients into a bowl and 2nd group into another bowl.
Dip each chicken piece (1 at a time) into butter mixture and then into bread crumbs to completely coat. roll up each chicken breast and place in a microwave safe dish with the seam side down on the bottom of the dish. (I use a Corning Ware dish that holds 2 quarts and is about 7 inches square.)
Put remaining crumbs on top of all chicken pieces. Sprinkle 2 tablespoons of lemon juice over chicken. Next drizzle remaining butter mixture over all of the chicken. (you need this for it to cook properly). Cover with waxed paper.

Cook 12-15 minutes at power level 7 in a microwave oven. Let stand 3-4 minutes

*You may double the recipe but you must cook the 2nd recipe in its own dish. After the 1st recipe comes out of the microwave, place it in the oven on warm covered with foil. Then cook your 2nd recipe in the microwave.
