1 c. sour cream
1 large egg
3/4 c. sugar
2 Tbsp. all purpose flour
1/4 tsp. salt
1 tsp. vanilla extract
2 1/2 c. apples, peeled and diced
1 (9 inch) pie shell, unbaked
For Crumb Topping:
1/2 c. packed brown sugar
1/3 c. all purpose flour
1/4 c. butter
1 tsp. ground cinnamon

Preheat oven to 400 . Beat together sour cream and egg; add sugar, flour, salt, and vanilla. Mix until smooth.
Stir apples into sour cream mixture.
Pour into unbaked pie shell and bake for 25 minutes.
Remove from oven and sprinkle crumb topping over the top. Bake 20 minutes longer or until topping is golden brown.
