Grilled Corn, Avocado and Tomato Salad Recipe

1 pint grape tomatoes
1 ripe avocado
2 ears fresh sweet corn
2 tbs fresh cilantro chopped

Honey Lime Dressing:
Juice of 1 lime
3 tbs vegetable oil
1 tbs honey
sea salt and fresh cracked pepper to taste
1 clove garlic minced
dash of cayenne pepper

Remove husk from corn and grill over medium heat 10 minutes. Corn should be brown and tended not mushy. Cut corn off cob with back of a knife to get juices. Set aside to cool

Slice tomatoes in half. Dice avocados and chop cilantro.

Dressing: Add all dressing ingredients in a small bowl and wisk. Set aside. Then combine tomato,avocado, cilantro and grilled corn with dressing. Mix gently. Sit at least 15 minutes in refrigerator.
