Dough:
4½ cups flour
3 tsp baking powder
1½ tsp salt
6 eggs
¾ cup milk
2 sticks of butter

Sift flour, baking powder and salt. Then work in butter. Beat eggs slightly. Add milk and then add to dry ingredients and mix until dough doesn't stick to your hands (add flour if too sticky). Makes the top and bottom curst for large cookie sheet. Chill dough about ½ hour covered.

Filling:
3 lbs ricotta cheese
2½ lbs italian sausage
3 eggs beaten
About ½ cup grated romano cheese
salt, pepper and parsley to taste
½ lb tuma cheese - diced
3 or 4 hard boiled eggs

Slit casing and remove sausage meat and fry. The put in a collendar and drain all the grease. Cool. Mix rest of ingredients and add sausage.

Roll out half of the dough. Put in cookie sheet. Add filling. Slice thin 3 or 4 hard boiled eggs and lay over top of filling. Press into the filling a little. Roll out rest of dough. Put on top and seal the edges. Prick with a a fork about 8-10 spots so steam can escape while cooking.

Bake 1 to 1½ hours in 350º oven or until brown.
