1/2 cup shortening
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup any flavor fruit jam

Directions:
Directions:
In a mixing bowl, cream shortening, peanut butter, and sugars. Beat in egg. In a separate bowl combine dry ingredients; gradually add to creamed mixture. Stir until completely incorporated.Cover and chill for 1 hour. Roll into 1 inch balls; place 2 inches apart on greased baking sheets. Using your finger or the handle of a wooden spoon make a depression in the center of each cookie. Bake at 375 degrees F (190 degrees C) for 10 minutes. Half way through cooking remake the depression in each cookie. Cool on wire rack. Fill the depression in each cookie with a small amount of jam.
