2 whole chicken breasts, skinned, boned and cut into bite size pieces
c. peanut butter
c. water
2 T. soy sauce
1 T. brown sugar
2 T. peanut or vegetable oil
2-3 cloves garlic, minced
tsp. crushed red pepper
3-4 c. sliced broccoli

Directions:
Directions:
In a small bowl, blend peanut butter, water, soy sauce, and sugar. Set aside. In work or large skillet, heat oil over high heat, add garlic and red pepper. Stir fry for 30 seconds. Add broccoli, stir fry until bright green about 3 minutes. Stir in peanut butter mixture. Cook, stirring constantly until sauce is smooth, about 3 minutes. Serve with cooked rice.
