1 lb fresh or frozen skinless cod, orange roughy, or catfish fillets about½ inch thick
¼ c milk
¼ c. all purpose flour
1/3 c fine dry bread crumbs¼ c grated Parmesan cheese
½ tsp dried dillweed
2 T butter or margarine, melted

Thaw fish, if frozen. Grease baking sheet; set aside. Rinse fish; pat dry. Cut into 4 serving size pieces. Place milk in shallow dish. Place flour in another shallow dish. In a third shallow dish, mix crumbs, cheese, and dillweed, and ½ tsp pepper. Toss with melted margarine. Dip fish in milk, then in flour. Dip again in milk, then in crumb mixture to coat all sides. Place on prepared baking sheet. Bake, uncovered, in a 450 degree oven for 6 to 9 minutes or until fish flakes easily when tested with a fork.
