Large bag of uncooked pinto beans
½ c. finely chopped fresh garlic
2 c. roma tomatoes, chunks
1 T. chili powder
½ c. finely chopped cilantro
8 pieces of bacon, cut into squares
1 c. chopped onions
1 to½ T. salt
1 T. cumin
water to cover/ about ½ gallon

Directions:
Directions:
Soak beans for 12 hours. Drain old water from beans. Cook bacon in pan until well done and then add onions, 3 T of cilantro, 3 T chopped garlic. Cook until onions appear transparent. When onions are done add bacon, chilli poweder, and cumin to pot of beans.

Add enough cold water to the pot to cover beans as well as fill the pot without spilling over the top while boiling. Add salt, stir, and cook on medium low heat. Stir often, while cooking to avoid sticking. Cook beans slowly until tender about 1
½ hours, During the last five minutes of cooking, add roma tomatoes, and any remaining garlic and cilantro.
