3 c flour
1 tsp baking soda
½ tsp baking powder
3 tsp cinnamon
3 eggs
2 c sugar
1 c oil
1 tsp vanilla
2 c grated zucchini
½ c nuts

Directions:
Directions:
Sift flour, baking soda, baking powder, cinnamon, and salt. Beat eggs until foamy. Add sugar, oil, vanilla, and sifted dry ingredients a little at a time. The mixture will be thick. Add zucchini, mix well, pour into 2 well greased floured 8 ½ x 4 ½ x 2 loaf pans. Bake at 350º for 1 hour. (Check at 50 minutes, if toothpick comes out clean bread is done.)
