1 small onion chopped
3 cloves garlic
2 Tablespoons margarine
1 cup water
1 16 oz whole tomatoes, chopped
1 10oz can rotel tomatoes
2 10 oz cans chicken broth
1 lb chicken breasts, chopped
1 10 oz can tomato soup
1 Tablespoon taco seasoning
1 T dried or ½ cup fresh cilantro
1 Tablespoon cumin
1-2 avocados, sliced
4-6 corn tortillas, cut in ½ strips
½ lb. monterey jack cheese, grated

Directions:
Directions:
Bake tortillas on baking sheet in a single layer at 350 degrees for 15 minutes or until crispy. ( I use the bag tortilla strips from the salad dressing isle) Remove and cool while soup is cooking. Sauté onion and garlic in butter until onions are translucent. Add chicken, tomatoes, soup and seasonings. Bring to a boil and lower heat. Simmer for 1 hour.

Top with tortilla strips, grated cheese and avocados.
