1 large white onion, chopped
1 green, red, yellow bell pepper, chopped
1 package baby bella sliced mushrooms
2 fresh garlic cloves
1 bunch parsley
1 bunch parsley
4 basil leaves
2 sticks fresh thyme
1 can of fire roasted garlic diced tomatoes
4 cans plain traditional spaghetti sauce
1 package spicy Italian sausage
1 Lb. ground meat
1 Lb. ground pork
salt, pepper, Italian seasoning, oregano
4 Tbsp.’s vegetable oil

Directions:
Directions:
Bake the sausage at 350º for about 40 minutes covered. Fry the meat in separate frying pans creating bigger pieces of meat, drain the excess fat then season with Italian seasoning and oregano. Set aside.

In a large pan add oil and sauté onions until soft *about 15 minutes*, adding dry oregano half way. Add mushrooms, continue to sauté until juices release, then add finely chopped basil. Next add all chopped bell peppers with finely chopped garlic and continue to sauté. The juice in the pan will have incredible flavor. Continue to slowly sauté vegetable mix for few more minutes and add fresh finely chopped parsley. After few minutes, add the already cooked meat, cut sausage in bigger chunks and combine the fire roasted tomatoes, finally add the spaghetti sauce. Start with 3 cans. I like my spaghetti chunky with some sauce for pasta, so i use 4 cans. Finally, add more finely chopped parsley and bring mixture to a boil. Enjoy!

Cooking this recipe always brought me joy and is one of two spaghetti versions I love. Finding what spice works the best to enhance each vegetable’s flavor and overall flavor was delicious adventure. It is one of those dishes that if I cut in half it will not taste the same, so be prepared to feed and army and have leftovers in the freezer.
