Rhubarb Nut Muffins Recipe

1 1/2 cup flour
3/4 cup Brown sugar
1/2 tsp baking soda
1/2 tsp .salt
1/3 cup oil
1 egg lightly beaten
1/2 cup butter milk (1/2 cup milk,1 1/2 tbsp vinegar)
1 tsp .vanilla
1 cup diced rhubarb
1/2 cup chopped walnuts

1 4 cup Brown sugar
1/4 cup walnuts
1/2 tsp cinnamon

Combine flour, Brown sugar, baking soda and salt. Combine oil,
egg, buttermilk and vanilla. Stir into dry ingredients. Fold in rhubarb and walnuts. Fill muffin cups 2/3 full. Sprinkle topping.

Bake 375 degrees 20 to 25 minutes.
