German Sweet Chocolate Cake Recipe

1 pkg. Bakers German's Sweet Chocolate (4 oz.)
C Water
2 C Flour
1 tsp. Baking Soda
tsp. Salt
1 C Margarine or Butter, softened
2 C Sugar
4 Egg Yolks
1 tsp. Vanilla
1 C Buttermilk
4 Egg Whites

Heat oven to 350 F.

Line bottoms of 3 (9 in.) round cake pans with parchment paper.

Microwave chocolate and water in large microwave safe bowl on high for 30 second increments until chocolate is melted, stirring between heating, until chocolate is completely melted. If heating on stove top, heat at very low heat until completely melted.

Mix flour, baking soda and salt; set aside. Beat margarine and sugar in a large bowl with hand mixer on medium speed until light and fluffy. Add egg yolks, 1 at a time, beating well after each addition. Stir in chocolate mixture and vanilla. Add flour mixture alternately with buttermilk, beating until smooth.

Beat egg whites in another large bowl with hand mixer on high speed until peaks form. Gently stir into batter. Pour into prepared pans. Bake for 30 minutes or until cake springs back when lightly touched in center.

Immediately run spatula between cakes and sides of pans. Cool 15 minutes and remove from pans. Remove parchment paper. Cool completely on wire racks.

Spread Coconut-Pecan Frosting between layers and over top of cake.
