1 extra serving size graham cracker pie crust
2 8oz. pkg. cream cheese, softened
1 C sugar
2 T lemon juice
t vanilla
t salt
1 1/4 eggs
2 T sugar
1 C sour cream
t vanilla

Directions:
Directions:
Preheat oven to 325 F. Combine cream cheese, sugar, lemon juice, vanilla and salt until well blended. Add eggs, one at a time, mixing well after each addition. Place crust on baking sheet; pour in filling. Bake for 35-40 min, or until knife inserted in from the edge comes out clean. Combine sour cream, sugar and vanilla; carefully spread over pie. Continue baking 10 min.; cool. Chill. If desired top with fresh or frozen fruit, thawed and drained.
