Cake:
3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
3/4 cup flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
1/2 tsp salt
1 cup finely chopped walnuts

Filling:
1/2 tbsp vanilla
4 tsp Oleo
1 cup powdered sugar
6 oz cream cheese

Directions:

Cake:
Beat 3 eggs on high for 5 minutes. Gradually add 1 cup sugar. Stir in 2/3 cup pumpkin, 1 tsp lemon juice.
Stir together:
3/4 cup flour
1 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
1/2 tsp salt

Fold into pumpkin mixture. Spread in 15 x 10 jelly roll pan. Spread 1 cup finely chopped walnuts on top.

Turn out on towel, sprinkle with powdered sugar. Cover with another towel and roll. Spread with filling and reroll. Wrap in foil to hold secure
