Stuffed Green Peppers Recipe

6 Large Green Bell Peppers
1 lb ground beef
1/2 C. chopped onion
16 oz can tomatoes (cut up)
1/2 C long grain rice
1/2 C water
1 tsp salt
1 tsp Worcestershire sauce
2 C shredded Mozzarella cheese

Directions:
Directions:
Cut tops from peppers; discard seeds and membranes. Chop enough off the tops to make 1/4 cup: set aside. Sprinkle the inside of the peppers lightly with salt. In a skillet cook the ground beef, onion and the 1/4 c chopped pepper until the meat is browned and the vegetables are tender. Drain off the excess fat. Add undrained tomatoes, uncooked rice, water, salt, Worcestershire, and dash of pepper. Bring to boiling; reduce heat. Cover and simmer for 15-18 minutes or until rice is tender. Stir in cheese. Stuff peppers with the meat mixture. Place in a 10x6x2 baking dish. Bake covered in a 350º oven for 30-35 minutes.

For something different, I often don't stuff the peppers. Instead I chop several of the green peppers and do all of the preparation the same and cut out the last step and my husband enjoys it as a chip dip and I as is.
