1/2 head broccoli, chopped very small pieces
1/2 cup buckwheat flour
2T. flaxmeal
1/3 cup water
1/2 red onion, diced
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 T. savory yeast flakes
1/3 cup cashew goats cheese or Macadamia ricotta cheese
2T. plant based oil
1T. chopped flat-leaf parsley
lemon wedges
1/2 cup vegan yogurt

Directions:
Directions:
Steam the broccoli for 2-3 minutes. Remove from the heat and set aside. In a bowl, mix the remaining ingredients, then add the broccoli. Form the mixture into palm sized patties and place in a non-stick frying pan over medium heat and cook for 5 minutes on each side.
Serve the fritters with the lemon wedges and yogurt. Store in the refrigerator for up to 2 days.
