2-3 Tbs. lime juice
1 tsp. curry powder
2 tsp. vegetable or olive oil
1 lb. chicken tenders
kosher salt and black pepper, for lightly sprinkling
lime wedges (optional) for garnish

1 c. diced pineapple
⅓ c. thinly sliced red onion
1 avocado, diced
1 Tbs. lime juice
3 Tbs. chopped cilantro
pinch of kosher salt

3 Tbs. sweet chili sauce
1 Tbs. honey
1 tsp. soy sauce
1 Tbs. warm water

Marinate chicken tenders in a ziplock bag with lime juice, curry powder, and oil for at least 30 minutes, up to 4 hours. Once marinated, grill chicken on a grill (indoor or outdoor) for about 3 minutes per side until cooked through.
For the Salsa: Combine all ingredients and gently toss to combine. Keep in refrigerator until ready to use.
For the Sauce: Combine all ingredients together and whisk with a fork until smooth.
To Serve: Plate grilled chicken and top with salsa and drizzle with sauce. Serve with lime wedges, if desired.
