2 Tablespoons olive oil
1 medium red onion chopped
1 large red bell pepper chopped
2 medium carrots , chopped
2 ribs of celery, chopped
1/2 jalepeno pepper minced , seeds removed
1 inch fresh ginger minced
4 cloves garlic minced
1/2 teaspoon salt
2 tablespoons child powder
2 teaspoons cumin
1 1/2 smoked paprika
1 teaspoon dried oregano
3 to 4 organic tomatoes diced with juices
2 cans ( 15 ounces) black beans rinsed
1 can ( 15 ounces) pinto beans rinsed
2 cups sodium free vegetable broth
1bay leaf
1 full lime juiced
Optional: 2 tablespoons chopped cilantro

Directions:

In a large pot over medium heat Cook for 7 to 10 min till tender 2 Tablespoons olive oil
red onion ; red bell pepper; carrots , celery, jalepeno pepper ; ginger; 1/4 teaspoon salt .

Add garlic ; chili powder; cumin; smoked paprika; oregano cook until fragrant about 1 min.

Add tomatoes and juices, black and pinto beans, broth & bay leaf. Stir and let simmer gently for 30 minutes. Remove from heat when cooked

Best results Place 1 1/2 cups of mixture to a blender and blend till smooth and place back in the pot.

Add cilantro and lime juice and salt to taste
