3 eggs
2 cups sugar
1 cup oil
1 tsp. soda
tsp. baking powder
3 tsp. vanilla
3 tsp. cinnamon
1 tsp. salt
2 cups grated zucchini, leave peeling on
3 cups flour

Directions:
Directions:
Grease & flour 2 loaf pans. Fill 1/2 full. Bake 350 for 50 min - 1 hour or until test done.

Mini muffins:
15-16 min
