1T butter
1c. chopped onion
3/4c. chopped celery
4c (or more) butternut squash pieces
1.75c. water
1 peeled apple
1 peeled pear
1/2c apple juice
salt to taste
pepper to taste
14oz vegetable broth
bay leaf

Directions:
Directions:
In 6qt. pan saute onion and celery in butter. All the remaining ingredients can be added when onions and celery are tender. Simmer for at least an hour. When everything is tender, puree. The recipe is from "Cooking Light" and produces 7 cups soup. I alter it by using 2 more cans vegetable broth instead of water and probably 6-7c. squash.
