3 c uncooked orzo
1- 10 oz bag fresh spinach
4 plum tomatoes, chopped
2 Tbsp. olive oil
-1 c champagne vinegar
1 tsp salt
tsp black pepper

Directions:
Directions:
Cook orzo according to package directions, drain, and return to pot. Stir in spinach; cover and let stand 5 minutes or until spinach is wilted. Stir in tomatoes. In small bowl, whisk olive oil and all remaining ingredients. Add to mixture, stirring to combine.
