c olive oil
tsp finely shredded lemon peel
3 Tbsp lemon juice
1 Tbsp snipped fresh oregano
2 cloves garlic, pressed
tsp salt
tsp pepper

Directions:
Directions:
In a screw-top jar combine oil, lemon peel, lemon juice, oregano, and garlic. Cover and shake well. Season with salt and pepper.

Balsamic Vinaigrette: Prepare as above swapping the lemon peel and lemon juice for 3 Tbsp balsamic vinegar and tsp Dijon mustard.

Red Wine Vinaigrette: Prepare as above swapping the lemon peel and lemon juice for 3 Tbsp red wine vinegar and tsp Dijon mustard.
