2 c sifted cake flour
3 tsp baking powder
tsp salt
tsp cinnamon
nutmeg
4 tbsp shortening
c + 2 tbsp granulated sugar
1 egg, beaten
1 c bottled milt or c evaporated milk and cup water
1 c finely chopped, pared, cored apples

Directions:
Directions:
Sift flour with baking powder, salt and tsp of the cinnamon, and tsp of the nutmeg. Work the shortening and c of the sugar with a spoon until fluffy and creamy. Stir in eggs, then add flour mixture alternately with the milk. Fold in apples, then fill greased or oiled muffin pans ⅔ full. Sprinkle with remaining 2 tbsp sugar, tsp cinnamon, tsp nutmeg. Bake in hot oven of 425 20-25 minutes.
