2¼ c sifted cake flour
3½ tsp baking powder
½ tsp salt
½ tsp cinnamon
½ nutmeg
4 tbsp shortening
½ c + 2 tbsp granulated sugar
1 egg, beaten
1 c bottled milt or ½ c evaporated milk and ½ cup water
1 c finely chopped, pared, cored apples

Directions:

Sift flour with baking powder, salt and ¼ tsp of the cinnamon, and ¼ tsp of the nutmeg. Work the shortening and ½ c of the sugar with a spoon until fluffy and creamy. Stir in eggs, then add flour mixture alternately with the milk. Fold in apples, then fill greased or oiled muffin pans ⅔ full. Sprinkle with remaining 2 tbsp sugar, ¼ tsp cinnamon, ¼ tsp nutmeg. Bake in hot oven of 425º 20-25 minutes.
