1 pound chicken breast, cubed
1 package frozen mixed vegetables
½ cup sliced celery
⅓ cup butter
⅓ cup chopped onion.
⅓ cup flour
salt and pepper
¼ tsp celery seed
1 ¾ cup chicken broth
⅔ cup milk
2 prepared pie shells

Directions:
Preheat oven to 425º. In large pot, combine chicken, vegetables & celery. Cover with water and boil for 15 minutes. Remove from heat and drain; set aside. In same pot, over medium heat, cook onions in butter until soft. Stir in flour and seasonings. Slowly stir in chicken broth & milk. Simmer over medium-low heat until thick. Remove from heat, set aside. Place chicken mixture into bottom crust of pie pan. Pour sauce over mixture. Cover with top crust & slit top. Bake 30-35 minutes or until crust is golden brown and filling is bubbly.
