2 c. whole wheat flour
½ c. coarse corn meal
½ c. rye flour
1½ tsp instant yeast
1½ tsp salt

Directions:
Directions:
Mix all ingredients in a large bowl. Add 1½ c. water and stir until blended (sticky). Cover with plastic wrap and let rest in a warm room (minimum. 70 º F) for 4 hours. Lightly oil your hands and shape dough into a rectangle. Place the dough into an oiled standard size loaf pan pressing dough to the edges. Brush the top with oil, cover with plastic wrap and let rest for 1 hour. Preheat oven to 350 º F. Bake about 45 minutes then remove to wire rack to cool. Yield: 1 loaf
