2 packages active dry yeast
1 c milk
1 c water
¼ c oil
¼ c honey
1 tbsp salt
1 egg, room temperature
4 to 4½ c whole wheat flour

Directions:
Stir together 2 cups flour and yeast. Heat milk, water, oil, honey, and salt over low hear until warm (125º to 130º). Add liquid ingredients to flour- yeast mixture. Beat until smooth, about 3 minutes on a medium speed of an electric mixer or 300 strokes by hand.

Beat in egg. Stir in whole wheat flour to make a moderately stiff dough. Turn onto lightly floured surface. Cover with bowl and let rest for 10 minutes. Knead until smooth and satiny, 5 to 10 minutes. Cover and let rest 20 minutes.

Divide dough in half. Roll each half into a 7x14 inch rectangle. Roll up from the narrow side, pressing roll into dough at each turn. Press ends to seal and fold under loaf. Place in greased 4½x8½ loaf pans. Brush with oil. let rise in warm place (80 to 90 degrees) until doubled, about 1 to 1¼ hours.

Bake in 400º oven, 35 to 45 minutes. Cover top with foil to prevent overbrowning. Remove immediately from pans and brush tops with melted butter or oil.
