3 cups flour
1 tablespoon sugar
1 teaspoon salt
Butter for tops of baked muffins
1 pkg. fast-acting dry yeast 1 cups warm water
3 tablespoons vegetable oil

Directions:
Directions:
Preheat oven to 375 degrees. Spray a muffin tin with nonstick coating. In a mixer bowl, stir together 2 cups of the flour, sugar, salt, and yeast. Add water and oil and mix 2 minutes, scraping down sides of bowl. Add remaining flour and beat 1 minute. Spoon batter into prepared muffin tin. To smooth tops, wet fingertips with water and pat smooth. Let rise in a warm place for 20 minutes.
Bake for 20 minutes or until lightly golden brown. Brush tops with butter if desired.
