3 eggs, beaten til frothy
1 C. oil
2 c. sugar
2 tsp. vanilla
2 c. grated zucchini
3 c. flour
¼ tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 tsp. ground cinnamon
½ c. chopped nuts

Directions:
Directions:
In a large bowl, mix together eggs, oil, sugar, vanilla, and zucchini. Mix remaining ingredients together. Blend well. Add nuts. Pour into two loaf pans that have been greased and floured. Bake at 325 degrees for one hour and 15 minutes. Remove from pans at once and cool on racks.
