7 medium potatoes, cooked, peeled and cubed
1/2 cup chopped cucumber
1/2 cup chopped onion
1/2 cup chopped green pepper
3 Tablespoons chopped pimento
1 1/2 teaspoon salt
3/4 teaspoon celery seed
1/4 teaspoon pepper
2 hard-cooked eggs
1/3 cup mayo
3 Tablespoons vinegar
2 tablespoons sugar
1 tablespoon prepared mustard
1/2 cup whipping cream

Directions:
Directions:
Stir together cubed potatoes, cucumber, onion, green pepper, pimento, salt, celery seed and pepper. Reserve 1 hard-cooked egg yolk. Coarsely chop the white and remaining hard cooked egg. add chopped eggs to potato mixture; chill. Blend mayo, vinegar, sugar, and mustard; whip cream and fold into mayo mixture. About 1/2 hour before serving, toss with potato mixture. To serve, spoon into lettuce lined bowl. Sieve the reserved egg yolk over salad.
