4 Cups Butternut Squash, " cubes
Cup Brown Sugar
1 tsp Garam Masala spice blend (more if you like it spicier)
3 Tbsp Butter, melted
Dash of Salt & Pepper


Directions:
Directions:
Preheat the oven to 375 F. Place the rack to the middle position.
Line a half sheet pan with aluminum foil and spray with non-stick cooking spray.
Peel and remove seeds and pulp from a medium sized butternut squash. Dice the squash into " cubes and place in a medium sized mixing bowl. Add the brown sugar, garam masala, salt and pepper and toss to coat. Pour the butter over the squash mixture and spread evenly on the foil lined pan.
Bake for 40-45 minutes or until squash is tender.

The sweet and spicy tones of this dish appeal to most of the friends I have shared this with- and has quickly become a favorite. Add more Garam Masala blend if you like spicy food and are a bit adventurous!
