Pie Crust

1½ cups all-purpose flour
8 tablespoons butter, cut into 8 pieces
½ teaspoon salt
1 egg
1½ tablespoons cold water

Directions:
Directions:
Combine flour, butter and salt in a medium sized bowl. Use a pastry cutter to cut the butter into the flour until the mixture resembles coarse meal. In a small bowl, beat egg and water together. Stir into flour mixture until well-combined, then press the mixture together with your hands to form a ball. Flatten the ball into a disk 1-inch thick, wrap in plastic and refrigerate.
 

Filling and Crumb Topping

6 large cooking apples (Gala, Granny Smith, etc.)
1 tablespoon fresh lemon juice
2 tablespoons flour
½ cup sugar
¼ teaspoon cinnamon
Crumb Topping:
½ cup sugar
½ cup light brown sugar
¾ cup all purpose flour
¼ teaspoon ground ginger
¼ teaspoons ground nutmeg
½ teaspoon ground cinnamon
Pinch of salt
6 tablespoons of butter

Peel and slice apples. Place apples in a large bowl and toss with lemon juice. Add flour, sugar, and cinnamon and toss again. To make the topping: Combine sugars, flour, spices, and salt. Use a pastry blender to cut butter into dry ingredients until the pieces of butter are the size of oatmeal.
Preheat oven to 375ºF. Roll the dough on a lightly floured countertop to about ¼-inch thick. Place into a 9 inch pie plate and press a decorative edge. Pile the apples into the shell. Sprinkle the crumb topping over the apples. Bake for about one hour.
