1 onion, chopped
2 cloves garlic, minced
6 cups low sodium vegetable (or chicken) broth
1 (11 oz.) can Green Giant Niblets sweet corn (or 1 cup fresh corn kernels)
2 large carrots, diced
3 stalks celery, diced
2 large potatoes, diced
Ground pepper and salt to taste
1/2 tsp. red pepper flakes (optional)
1 cup uncooked shrimp, peeled and deveined
1 cup scallops
1/4 lb. halibut, cut into small bite-sized pieces
1 (12 oz) can evaporated milk

Directions:
Directions:
Cook onion and garlic until the onion is translucent. Transfer to slow cooker and add broth, corn, carrots, celery, potatoes, and seasonings. Cook on high for 3 hours. Stir in fish and cook 1 more hour. Stir in evaporated milk, and heat thoroughly. Serve with crusty bread and oyster crackers.

Switch it up and use any kind of fish you like. Add some Old Bay seasoning for a little kick.
