1 lb bulk Italian Sausage
2 c. chopped onion
1 c. carrots (diced)
2 c. mushrooms (sliced)
2 T. garlic (minced)
4 c. chicken broth
1 c. Italian stewed tomato's (chopped)
1 10 3/4oz can of tomato sauce
1 c. Mafalda pasta
2 c. fresh spinach (chopped)
1 c. provolone or mozzarella cheese (diced)
1/4 c. parmesan cheese (shredded)
4 tsp. fresh basil

Directions:
Directions:
Brown sausage in large saucepan.
Add onions, carrots and sauté for 3 minutes. Stir in mushrooms, garlic and sauté them for 3 minutes.
Add broth, stewed tomato's, tomato sauce.
Bring to a boil. Add pasta and simmer till done.
Stir in spinach and cook till spinach is wilted.

Place cheese in serving bowls. Pour soup on top. Garnish w/parmesan and basil.
