2 cups all-purpose flour
¾ cup sugar
¾ tsp baking soda
½ tsp salt
3 ripe bananas
¼ cup plain yogurt
2 eggs
6 tbsp butter, melted
1 tsp vanilla

Directions:
Directions:
Place bananas in the oven until heated through and fragrant, then peel and mash. Stir in yogurt, eggs, butter and vanilla blending well. Set aside. In a large bowl whisk together the dry ingredients. Gently fold the wet ingredients into the dry, just to blend – do not beat. Pour the batter into a prepared 9x5" loaf pan and bake 350º for 50-60 minutes.
