1/2 - 3/4 lb Extra Lean Ground Beef

1 each (small) Red & Green Bell pepper, finely chopped

1/2 C BBQ sauce

1 can Buttermilk Biscuits (10 count)

3/4 C Mexican Finely Shredded Cheese

Directions:
Directions:
Heat oven to 375 degrees.

Brown meat with peppers in a medium skillet. Remove from heat and stir in BBQ sauce.

Separate biscuits. Press 1 biscuit onto bottom and up the sides of each of the 10 muffin cups.

Bake biscuits for 4-5 minutes and remove from oven.

Spoon the meat mixture into the biscuit cups; press into the cups with the back of a spoon. The filling will be mounded.

Bake 8-10 minutes or until the biscuits are lightly browned. Top with cheese and place back into the oven for 3-4 minutes or until melted.

This recipe is good to make ahead and freeze. Prepare recipe as directed and allow to cool completely. Wrap tightly and store in the freezer for up to 3 months. Thaw in the refrigerator, then place cups back into a muffin pan and bake at 350 degrees for 10 minutes or until heated throughout.
