Ingredients: 1 box Duncan Hines Lemon Cake Mix Crisco to grease cake pans Eggs, Oil, etc listed on Cake Mix 1 Jar Lemon Curd (available in Jam/Jelly aisle, I usually use Dickinson's)
Cream Cheese Frosting: 8 oz. pkg. Philly brand or favorite Cream Cheese, softened 1 Stick Butter, softened 1 box 16 oz. TenX Powdered Sugar 1 tsp. vanilla

Directions:Set out butter and cream cheese to soften in the bowl you plan to make frosting in. (I have even done this the night before and covered bowl with plastic wrap.) Bake Cake in round layer cake pans according to package directions. While cake cools, make frosting.
Cream very softened Cream Cheese and butter together using a mixer. Add powdered sugar slowly in increments., beat after each addition. Add vanilla and beat till fluffy. You can thin with milk if ever necessary.
After cake is completely cool, split the layers. I use my giant serrated bagel knife. And don't panic if they aren't completely even or straight. Spread a thin layer of lemon curd between each layer and stack layers. Frost with Cream Cheese Frosting. |

Notes: TIP: I am frequently too lazy to split the layers, so I just use about 2/3 or more of the lemon curd and spread a thick generous layer between the 2 layers of cake. Then stack and frost. This cake is lemony delicious and everyone thinks it's from scratch. This is the most-requested birthday cake from Todd's kids. The frosting is also good on a chocolate cake or carrot cake.
