2 Medium Zucchinis
Pound Ground Meat
1 small onion, chopped
Cup Sliced Fresh Mushrooms
Cup Sweet Red Pepper, Chopped
Cup Green Pepper, Chopped
1 Cup Shredded Cheddar Cheese (I use Smoked Gouda)
2 Tblsp Ketchup (I use hot Ketchup)
Salt and Pepper to taste

Trim the ends of the zucchini. Cut in half lengthwise; scoop out the pulp, leaving a shell. Finely chop pulp. In a skillet, cook beef and onion, brown beef, drain. Add pulp, mushrooms and peppers and heat until veggies are somewhat soft, but not mushy. Remove and place in bowl add Cup cheese, ketchup, salt and pepper; mix well. Spoon into the zucchini shells. Place on greased baking dish. Sprinkle with remaining cheese, bake, uncovered at 350 deg for 25-30 minutes or until zucchini shells are tender.
